Autumn 2026 Wine Club recipe

From Kathy’s Kitchen

As our long-term members know, we are very fond of pairing our Pinot Noir with wild Pacific Salmon, and we diligently experiment with new and interesting recipes. We discovered a new rub this fall and are excited to share it with you. It's also lovely on Steelhead.

Smokey, Spicy Salmon

Salmon
Ingredients:
  • 1.5 to 2 lbs Salmon
  • 1 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp Smoked Brown Sugar (regular Dark Brown Sugar will also work)
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Ground Black Pepper
  • 1 tsp Dried Thyme or Dried Basil
  • Zest of one Lime
Preparation:
  1. Debone Salmon if necessary.
  2. Rub with olive oil.
  3. Mix spices, herbs and lime zest together in a small bowl. Rub on salmon.
  4. Grill on a water-soaked cedar plank for 12 to 20 minutes, depending on thickness of salmon and desired doneness. We like ours at 125 – 130F. Or roast in a 425 oven for 10 to 15 minutes. Enjoy with your favorite bottle of Bryn Mawr Pinot Noir and a squirt of fresh lime juice.
The perfect pairing:

We recommend the 2024 Estate Pinot Noir as the bright fruit will standout amongst the rich spices. Cheers!
