Chef Jonathan Biko Mandela Jones of Bryn Mawr Vineyards offers a practical take on grass-fed butter. He says its more pronounced herbal flavor, softer texture, and vibrant yellow color can stand out. But he doesn’t find the flavor difference significant enough to justify the added cost for everyday cooking or baking. His advice is straightforward: spend more when butter is a defining flavor in the dish. Otherwise, a good-quality conventional butter can deliver excellent results for less.
